INGREDIENTS
- Dough:
- 450 g Whole Wheat Flour
- 8 g of dry yeast or 25 g of fresh yeast
- 250 ml Water
- 30 ml Olive Oil
- 5 g Salt
- Pizza sauce a/n
- Filling:
- 500 g Ricotta
- 1 Small red bell pepper
- 200 g Broccoli
- 2 Garlics
- 50 g Grated cheese
- Salt and pepper to taste
- Optional: oregano, parsley, sesame seeds, etc.
INSTRUCTIONS
- Place the flour, yeast, oil, yeast, salt, and water in a bowl. Form a uniform dough. Cover and let it rest until it doubles in volume.
- Cut the broccoli into small florets and steam it (it will preserve more of its nutrients) or in a pot with plenty of boiling water for about 5 minutes. Reserve.
- In a frying pan, place the diced onion and bell pepper. Sauté for a few minutes, add garlic, small cut broccoli. Cook for a few minutes.
- Add the ricotta and cook for about 3–5 minutes. Remove and place the cheese and season to taste. At this point, I recommend tasting and adding salt if necessary (is the cheese is very salty, you won't need to add it). Reserve.
- In a pizza pan, place a little oil and stretch the dough with your fingers, giving the dough a round shape, covering the entire pan. Paint with pizza sauce. For pizza with good crumbs, let it rest for 15-20 more minutes before pre-cooking.
- Cook in a strong oven for about 5 minutes. Reinforce with pizza sauce if desired and place the filling covering the entire pizza. Intersperse cream cheese cubes between the filling and cook for 10 more minutes or until the cheese melts. Do not toast too much, as it will be too crispy.
